Coffee freshness

At Piccolo Espresso Bar, we allow our coffee beans to age after roasting for between 5 and 14 days before serving. Freshly roasted coffee contains carbon dioxide and other gases which are slowly released over many weeks after roasting. This is often referred to as de-gassing and why we store and sell our coffee in one-way valve bags. Such bags allow gas to escape but prevent new air from entering. 

Leaving coffee a few days before serving improves flavour and it continues to stay fresh for a couple of weeks. We find that overly fresh coffee can taste gassy and too sharp. We currently roast weekly at piccolos.coffee. When you place an order online at piccolos.coffee, we will pack and send from the freshest batch available and within two business days. Each bag will be clearly marked with a 'roasted on' date.
